Lucknowi Kabab



Ingredients:
* 800g Minced Meat
*4 tb sp heaped Papaya paste
*4 tb sp gram flour (roasted)
*2 tb sp Cumin seeds (Zeera)
*1 tb sp Coriander seeds(Dhaniya)
*3 black cardamom(badi elaechi)
*5 cloves (Long)
* 10 seeds of black pepper (kaali mirch)
*pinch of nutmeg (jaiphal)
*cinnamon (daal chini) 1 inch piece
*7-8 Red chili dry
*1 & 1/2 Ginger paste
*1 & ½ Garlic paste
*2 petals star anise (phul chakri) => (optional)
*1/2 inch piece Pipri (optional)

Method :

1. Grind papaya with skin
2. Mix papaya paste and 1 tsp salt with minced meet and keep it for 6-7 hrs at normal temp.
3. Roast gram flour with cumin seeds, coriander seeds, Red chili, cardamom, cloves, black pepper, cinnamon, star anise, Pipri, nutmeg.
4. Now grind roasted masala and mix with the marinated minced meet and add ginger garlic paste.
5. Make small cutlets of meat and shallow fry it on low flame.
6. Serve it with onion salad and nans.
